Thin & Chewy Chocolate Chip Cookies

I don’t want lousy, cardboard cookies like you buy in a box. After several different experiments playing with shortening vs butter, chilled batter, and fat to flour ratios, this recipe was born. They looked wrinkled and sad, but taste amazing.

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups packed brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1 1/2 cups chocolate chips

Method

  1. Preheat over to 350F.
  2. Cream together butter, brown sugar, and white sugar.
  3. Mix in eggs and vanilla.
  4. In a separate bowl, mix together flour, baking soda, and salt.
  5. Mix dry ingredients in with the wet ingredients until smooth.
  6. Fold in the chocolate chips.
  7. Using a rounded tablespoon or cookie scoop, scoop out dough balls onto a silpat lined cookie sheet. These expand a lot! Only make 8 cookies per sheet!
  8. Bake for 10 minutes.
  9. Cool cookies for 5 minutes before transferring to a wire rack.

Adult Themed Variation: add whatever kind of chopped nuts you want to make Scrotum Cookies; wrinkly nut sacks of joy. To make them a little extra, mix together equal parts icing sugar and water and drizzle/splatter icing on them.
